"As the storm's winds died down, Chef Scott Boswell kept his fine-dining establishment Stella shuttered and served hamburgers to French Quarter stragglers and hungry construction workers. Mr. Boswell opened up Stanley at 1031 Decatur Street, 504-593-0006, an informal cafe that shows off his attention to detail with less fancy breakfast and lunch fare. The breakfast menu is dominated by seemingly mundane egg dishes that transcend the city's usual brunch fare. Eggs Stanley ($9.75) a riff on eggs Benedict, tops the traditional poached eggs and bacon with perfectly fried Louisiana oysters and an ethereal hollandaise that can turn the most jaded brunch-goer into a saucy convert. During the lunch rush, the menu switches to sandwiches and burgers. "
